We are a predominantly whole foods, plant-based household. I make a mean cashew sour cream you couldn’t tell from the real deal. We sub lentils for ground beef and no one bats an eye. As my husband is fond of saying, we eat like kings.

However, for birthdays and special events we go all out and make the real deal. The two special meals most requested in our house are Macaroni and Cheese and Fettuccine Alfredo.

Tonight we are celebrating L’s 14th birthday. At his request, we are having Fettuccine Alfredo.

Fettuccine Alfredo

Creamy, rich, delectable. Hands down the best alfredo sauce I’ve ever made.

  • 1/2 cup butter
  • 2 Tbsp cream cheese
  • 1 pint heavy cream
  • 1 tsp garlic powder
  • 2/3 cup parmesan cheese (grated)
  • 1 pound fettuccine (prepared according to box)
  • salt (to taste)
  • pepper (to taste)
  1. Melt butter in saucepan. When melted, add sour cream and soften. 

  2. Stir in heavy cream. Add garlic powder, a touch of salt, and a few grinds of pepper. 

  3. Simmer gently for 15 minutes. Remove from heat and fold in parmesan. 

  4. Mix with hot fettuccine and serve.
